Step 1
Season your beef with onion, 2 crushed garlic cloves, salt, pepper, cumin powder, oil and vinegar.
Step 2
Heat 2 spoons of oil in a casserole. Add the finely chopped celery, peppers, onions, and garlic.
Step 3
Then add the sugar and let caramelize, when it is almost black, incorporate the pieces of beef.
Step 4
When your beef pieces start to simmer again in oil, add the tomatoes and beef seasoning with chili, parsley, basil, oregano, turmeric, 2 drops of tabasco or Maggi.
Step 5
Brown for about 10 minutes, then cover with water so that the beef simmers over medium heat for more than 40 minutes to be tender.
Step 6
Add bay leaves, spring onions, thyme, chives (a whole scotch pepper bonnet).
Step 7
Once the meat is cooked, add the cornstarch to get a thicker sauce. Correct with salt, pepper.
