Soak your yellow split peas in water for two to 24 hours.
Slightly boil in water, salt and turmeric. You should only soften the peas not cook it.
Drain the peas and let it cool then mix it in two different methods:
- method 1: add (optionally) garlic, parsley and hot pepper and mix until you achieve a smooth powder.
method 2: mix separately (optionally) garlic, parsley and hot pepper to avoid mixing your peas for too long, until you achieve coarse grains.
Roast your grains on a hot pans for more than five minutes to achieve tough grains, like the COUAC in French Guiana. Eat with smoked fish, in a salad or with lentil/red peas stew...
