Step 1
Season your chicken with salt, pepper, green or jerk seasoning, vinegar, thyme & curry powder.
Step 2
Let your season chicken rest for at least one hour then fry onions, hot pepper and ginger in oil.
Step 3
Add garlic last then jeera, massala and curry powder to stir fry.
Step 4
Pour some chicken stock (or water mixed with a chicken cube) to form a paste.
Step 5
Then add your chicken and more water mixed with the seasoning from your chicken gradually to stif fry your chicken (and not boil it).
Step 6
Once done plenty of time until cooked, add your vegetables of choice (no salt as your curry is very salty thank to the chicken stock).
Step 7
Off the heat, sprinkle some parsley and squeeze a lime juice on your chicken and gravy.
