Step 1
Season your chicken with black pepper, hot pepper scotch bonnet and green or jerk seasoning. NO SALT!
Step 2
Stir fry your chicken for 3 minutes each side with the ginger then add your oyster sauce, light soy sauce, dark soy sauce, vinegar mixed with alcohol of your choice.
Step 3
Once properly cooked add cornflour mixed in water to thicken your sauce.
Step 4
Add the onions (grossely cut like in teh chinese restaurant) at the end so they are still crunchy.
Step 5
Sprinkle with fresh parsley.
